When I found this recipe on Pinterest, I didn’t realize it would be life altering. These rolls are light and fluffy, super yummy and best of all are done in under 2 hours! Yes, that’s right. Two hours. You’re welcome. Anytime I’ve served them, they’ve gotten rave reviews. My Love can’t resist sneaking one while they’re hot from the oven. I usually make a double recipe, partly because I often make them for company and my family wouldn’t leave enough for said company, and also because they freeze so well, it’s nice to have them handy for a quick addition to a light dinner. I did do a little of my own tweaking so that my dairy-free girl is able to eat them.
Easy Quick Buns
In a KitchenAid (or by hand, if you do not have a KitchenAid, poor soul), mix together:
1 3/4 cups of warm water
1/3 cup white sugar
Sprinkle on top of water:
4 1/2 teaspoons of yeast
Add:
2 cups of flour
Mix well
Mix in:
1/2 cup of oil
1/2 teaspoon of salt
Continue to add 2-2 1/2 cups of flour until you have a soft dough. It will be slightly sticky.
Turn your dough out onto a floured surface (I use a large, wooden cutting board) and cover with a large bowl. Let rest for 15-30 minutes.
Pat out dough and cut into 12-15 pieces using a knife or one of my ‘don’t-want-to-live-without’ kitchen gadgets: the dough scraper. (I got mine at Stokes…it was inexpensive, but it’s an indispensable tool.)
Now, I like to make Parkerhouse rolls, so I divide each section in half, forming into balls, then I put the two pieces in a greased muffin tin.
If you prefer, simply form into balls and place them on a greased cookie tray. Cover your rolls and let them rise for about 45-60 minutes, or until doubled in size. I have a wonderful proofing setting on my oven.
Once they are doubled in size, bake in a 400 degree oven for 12-15 minutes. If you don’t have a dairy-free girl, go ahead and brush the tops with melted butter. Oh my.
Is that a beautiful sight, or what? Too bad you can’t smell them. It’s ok. You can be jealous. But, honestly, go make some. It’s worth it. Your family will want to honour your efforts with gifts–and maybe me, too, for sharing.
I just might need to make again this week while my cb girl and her hubby are here…can’t wait to see them!!
